Chicos

3 c chicos
12 c water
11/2 lbs cubed pork
1 diced onion
1 clove minced garlic

1/2c chile caribe
1/2 t oregano
3 t salt
1/2 t black pepper

Wash chicos thoroughly; soak overnight; drain when ready to use.

Boil chicos until tender about 31/2 hours in 6 cups water.Brown pork; add onion and garlic.

Saute together until tender; drain excess fat. Add pork, chile, oregano, salt, pepper and 6 cups water to cooked chicos.

Simmer for 1 hours or until the meat and corn are tender. Makes 2 quarts.

Note: Chicos may be cooked in a pressure cooker for 45 minutes at about 15 pounds pressure.
