Basic Green Chile Sauce

3 T cooking oil
1 small onion chopped
4-6 garlic cloves, minced
1 t cumin
1 t oregano
2-4 T flour

1 potato cubed and cooked (optional)
6-8 c water or two 32 oz boxes of chicken stock
6 T powdered green chile or 1/2 to 1 c crushed green chile
salt to taste

Saute onion, garlic and spices in 2 T oil until translucent. Lighly brown flour in remaining oil. Add remaining ingredients and simmer 20 minutes. Add mashed potato for added thickness, if desired.
